A 2010 Cabernet Sauvignon from Sweetwater Estate is a wine that embodies both the distinct character of its terroir and the impact of the vintage. The terra rossa soils, known for their rich mineral content and drainage properties, have undoubtedly contributed to shaping this Cabernet Sauvignon's unique expression.

In appearance, the wine likely showcases a deep, garnet color that has matured with grace over the years. The 2010 vintage, marked by its own set of climatic conditions, has lent a certain sophistication to the wine's hue, offering a visual hint at the wine's maturity and complexity.

The aroma of this Cabernet Sauvignon is a symphony of both primary and secondary characteristics. The terra rossa soils have played their part in giving rise to intense blackcurrant and possibly dark cherry notes, which are classic hallmarks of Cabernet Sauvignon. Alongside these fruit-driven aromas, you find hints of cedar, tobacco, and possibly dried herbs. These secondary aromas, resulting from aging and interaction with oak, add layers of depth and complexity to the nose.

As the wine graces the palate, its maturity is more pronounced. The tannins, once firm, have softened with age, resulting in a smoother and more integrated structure. The rich fruit flavours observed on the nose carry over to the palate, joined by nuances of earthiness and perhaps even a touch of leather or cigar box, which are indicative of a well-aged Cabernet Sauvignon.

The finish of the wine is lingering and contemplative. The 2010 vintage's maturity has contributed to a finish that gracefully trails off, leaving a reminiscence of the wine's complex flavours.

Shiraz, known as Syrah in some parts of the world, is celebrated for its rich and robust character, and when transformed into a sparkling wine, it offers a delightful and effervescent twist.

The climate and terroir of the Hunter Valley play a significant role in shaping the characteristics of the Shiraz grapes grown there. The region's warm climate, combined with its unique soil composition, contributes to the development of ripe and concentrated flavours in the grapes.

In terms of tasting notes, our Cardinal exhibits the following characteristics:

1. Colour: Deep, intense ruby red with vibrant hues.
2. Aromas: Aromas of dark berries such as blackberries and mulberries, along with notes of black cherries and plums. Subtle undertones of pepper, and a hint of oak are present.
3. Palate: The palate showcases a balance between the ripe fruit flavours and the lively effervescence. Juicy black fruits, accompanied by a touch of dark chocolate and a subtle earthy undertone. The characteristic spiciness of Shiraz is softened in this wine’s profile.
4. Body and Structure: A medium bodied with well-integrated tannins that provide a smooth texture. The sparkling nature of the wine adds a refreshing and invigorating quality to the mouthfeel.
5. Finish: The finish is medium, leaving behind a lingering impression of dark fruit flavours and a hint of spice and sweetness.
6. Food Pairing: Cardinal can pair wonderfully with a range of dishes. Its bold flavours and effervescence make it a versatile choice that can complement hearty fare such as barbecued meats, game, roasted vegetables, and charcuterie. The wine's acidity and bubbles can help cut through rich and savory flavours.

Overall, Cardinal is made from Shiraz grapes grown in the Hunter Valley and offers a captivating fusion of the region's terroir-driven characteristics and the exuberance of sparkling wine production techniques. It's a wine that can make any occasion feel festive and memorable.

Deep red in colour, a heightened aroma of mocha coffee and spicy dark fruits with a creamy vanillan oak background note. The palate is both powerful and voluminous with layers of unravelling flavour of plumb and blueberry fruits balanced with very fine and structured tannins that linger.

Dalwood Estate Semillon grows in sandy loam soil on the south bank of the Hunter River. The 2020 vintage was warm, dry and low yielding. The fruit was hand picked in mid January and is fragrant with lemongrass aromas and a pure and elegant palate.

The vintage was warm and dry in the lower Hunter Valley, resulting in beautifully ripe Semillon with fragrant lemon and lime fruit and crisp natural acidity. Being preservative free this wine is best enjoyed as a young wine, it is not suitable for cellaring.

The Sweetwater Estate Cabernet blocks grown on the red clay loam over weathered limestone were picked in late February. The cool 2021 vintage resulted in beautifully ripe and pristine fruit. Deep red with blackberry, sage and cassis aromas and a fleshy palate with fine grained tannins.

Inspired by the original plantings, the Temparnillo & Touriga are now back in this historic vineyard, reviving the property of this rich history. 2020 is the first harvest in the this recent chapter for the vineyard producing a savoury and medium bodied dry red.

Both varieties where picked at the same time, allowing us to ferment the varieties together. Using old French oak barriques this softens and allows no influence of new oak characters maintaining a lightness to the wines.

Palate: Red fruit of plums and cherry, accompanied by subtle spice and a textural finish.

The palate is in the Hilltops medium bodied style and does not disappoint with lashings of juicy cherry fruit integrated with fine tannins throughout the palate and a fresh lingering acidity. The wine is combination of flavour, softness and lightness.

The 2007 vintage enjoyed warm summer conditions, perfect for maturing rich ripe Shiraz. The end result is generous blackberry & plum with "Hunter" savoury characters of spice and earth, balanced carefully with 60% American & 40% French oak management.

This wine has luscious primary fruit and a great tannin structure to ensure it will age gracefully and reward the patient few.

The warm and dry 2018 vintage resulted in beautifully ripe pristine fruit. Deeply coloured with fragrant cherry plum and violet aromas. The natural fermentation process was completed with maturation in oak barrels to produce a velvety soft palate with admiral length.

The 2017 Sweetwater Estate Shiraz and Cabernet blocks were picked on the 18th and 27th February. The warm dry 2017 vintage resulted in beautifully ripe and pristine fruit. Deep red with plum, blackberry, sage and cassis aromas  with fine grained tannins.

Dalwood Estate Shiraz is from the rich red soils of the Hunter Valley. The 2019 vintage was warm and dry with low yielding and concentrated fruit picked in early February. Deeply coloured with red fruits and spice followed by a seamless palate with well integrated oak.

Bright light gold with green hues, the lifted bouquet displays sweet lemon/lime blossom character. A luscious palate shows a sweet lemon, lemon pith and apricot with citrus acidity to balance the richness and finishes clean and wanting more.

Tumbarumba NSW is a high altitude, cold climate area in the western foothills of the Snowy Mountain ranges. It has long cold winters with frequent snow, followed by warm summer days and cool nights. Pinot Noir are grown here on decomposed granite soil. The 2021 vintage was cool, resulting in lengthy slow ripening.  A fragrant and floral wine with aromas of  red cherry and earthy spice and a long silky palate which has intense flavour & complexity.

Verdelho has proven itself to be best suited to warmer viticultural climates,  such as the Hunter Valley, where a complex unwooded style flavour ripeness is achieved and expressed early in the growing season allowing a fuller flavoured aromatic white wine.

Brilliant youthful green in colour.  A pungent aroma of spicy citrus, musk stick and hints of lavender whilst the palate is constant and complemented with hints of lemon and passionfruit with a subtle linear acid structure.

Dalwood Estate Chardonnay grows in sandy loam soil on the south bank of the Hunter River. The 2023 vintage finished warm and dry after a very wet spring. The fruit was harvested in early February and is exotic with ripe flavours of peach and melon, and a creamy palate with well integrated oak.

From the cool climates of southern New South Wales comes this fresh, new offering from Tumbarumba. Made with carbonic fermentation and whole berry Pinot Noir this is a juicy and fragrant pinot with strawberries liqueur cherry and soft seamless palette.

This Hunter Valley Rosé is made from fruit picked at our Dalwood vineyard, on the banks of the Hunter River. It is fragrant and elegant, with ripe red berry aromas. The palate is smooth with a long savoury texture and a crisp refreshing finish.

Appearance: The wine has a deep, intense colour with vibrant ruby to purple hues. This richness in colour is often a hallmark of Malbec wines.

Aroma: On the nose, you find a delightful bouquet of dark fruit aromas such as blackberry, plum, and black cherry. There is also be hints of floral notes, such as violets, as well as subtle spice undertones like black pepper or a touch of vanilla from oak aging.

Taste: When tasting the wine, you experience a medium to full-bodied palate, with a smooth and velvety texture. The prominent flavours revolve around the dark fruits mentioned earlier, accompanied by a  mix of blueberry and mulberry notes. There are some oak-driven flavours, such as cedar or toasty elements.

Tannins: This wine has moderate to firm tannins, which can add structure and complexity to the wine. In a 2022 Hilltops Malbec, the tannins are be well-integrated, providing a balanced mouthfeel.

Acidity: Given the Hilltops region's cooler climate, the wine displays a refreshing acidity that contributes to its overall brightness and age-worthiness.

Finish: The finish is satisfyingly long, with the fruit and spice notes lingering on the palate.

Overall, a 2022 Malbec from the Hilltops region of Australia is a flavourful and expressive wine, reflecting the unique terroir and climate of the area. It should be enjoyed in its youth, but with its structural components and quality, it has the potential to age gracefully over several years.
