An elegant and expressive sparkling wine, is crafted from Chardonnay and Pinot Noir sourced from the cool-climate Tumbarumba region.

This 2022 vintage was matured on tirage for almost three years before disgorgement, building complexity and finesse.

Fresh acidity and minerality reflect the region’s terroir, while extended lees ageing delivers creamy texture, persistent fine bubbles and subtle brioche notes. Flavours of green apple, citrus and red berries are balanced by toast and floral aromatics, creating a harmonious, refined and beautifully structured sparkling wine.

The grapes for this Hilltops Pinot Grigio were harvested in the cool of the early morning and gently pressed to preserve delicate aromatics and freshness. The juice was lightly clarified before fermentation. Fermentation took place primarily in temperature-controlled stainless steel tanks to retain the vibrant fruit character and crisp style typical of Pinot Grigio.

Pale straw with bright green hues. The nose reveals lifted aromas of pear, green apple, and citrus zest, complemented by delicate notes of white blossom and a hint of fresh almond. The palate is light to medium-bodied and vibrant, showing crisp orchard fruit and subtle stone fruit flavours supported by a gentle textural softness. Refreshing natural acidity and a clean mineral edge provide balance and drive, finishing bright and lively.

Another fine example of the wine that can be made from the cold climate region of Tumbarumba. We have been making Chardonnay from this region for over 30 years.

Aromas are delicate and refined, featuring notes of green apple, citrus, and pear, with a subtle mineral undertone. The cool climate of Tumbarumba enhances the retention of natural acidity, providing a zesty backdrop to the aromatics.

The French oak fermentation and aging impart a creamy, buttery texture, along with nuances of vanilla, toasted nuts, and a touch of spice. This combination of flavours creates a well-balanced and complex profile.

This is the kind of energetic Tumbarumba and modern Australian chardonnay that you could drink everyday. This will also age slowly and continue to show you more detail over the next 5-8 years. Crafted from premium fruit grown just outside Young and Boorowa in the renowned Hilltops region, the 2022 Cabernet Malbec is a classic blend that beautifully showcases the power and elegance of these two iconic varieties. The wine displays a deep ruby colour with vibrant purple hues and opens with an expressive bouquet of blackcurrant, ripe plum and blueberry, layered with subtle hints of capsicum, mint and delicate floral notes. French oak maturation adds further complexity, bringing refined characters of vanilla, cedar and gentle spice.

Rich yet beautifully balanced, the palate delivers a medium to full-bodied expression with generous dark berry fruit, touches of blackcurrant leaf and a plush, velvety mouthfeel. The Cabernet provides structure and fine tannin grip, while the Malbec contributes softness and depth, creating a harmonious and elegant wine with vibrant natural acidity and excellent ageing potential.
