Colour: Straw and melon flesh. Rich vibrant energy exudes this wine into the eye.
Aromas: The wine does present a captivating bouquet of aromatic qualities. Expect aromas of ripe tropical fruits such as pineapple, mango, and possibly a touch of apricot. These fruity notes is accompanied by floral hints and subtle citrus undertones.
Palate: On the palate, it does showcase a medium body with a focus on a luscious and balanced sweetness. The ripe tropical fruit flavours from the nose transition seamlessly to the palate, accompanied by a vibrant acidity that keeps the wine fresh and lively. The sweetness does provide a smooth and mouth-filling texture.

This 2022 vintage was matured on tirage for almost three years before disgorgement, building complexity and finesse.
Fresh acidity and minerality reflect the region’s terroir, while extended lees ageing delivers creamy texture, persistent fine bubbles and subtle brioche notes. Flavours of green apple, citrus and red berries are balanced by toast and floral aromatics, creating a harmonious, refined and beautifully structured sparkling wine.

Classic Shiraz Hilltops 2023
Regular price $45.00This Hilltops Shiraz is a refined expression of site, season, and careful winemaking.
Hand-harvested in the cool of early morning from select blocks across our Dalwood and Sweetwater Vineyards, the fruit was picked for freshness and balance before being matured for 12 months in French oak barriques (50% new, with the remainder in seasoned oak). The result is a Shiraz that layers subtle spice and oak complexity over vibrant, expressive fruit.
In the glass, it’s deep ruby with purple hues. Aromas of blackberry, dark cherry, and plum lead into notes of black pepper, clove, and dried herbs. The palate is medium-bodied and supple, with dark fruit, hints of dark chocolate and espresso, and silky tannins carrying through to a long, composed finish.
A beautifully structured Shiraz with both generosity and restraint.
