The 2007 vintage enjoyed warm summer conditions, perfect for maturing rich ripe Shiraz. The end result is generous blackberry & plum with "Hunter" savoury characters of spice and earth, balanced carefully with 60% American & 40% French oak management.
This wine has luscious primary fruit and a great tannin structure to ensure it will age gracefully and reward the patient few.

Regular price $35.00Sweetwater Estate vineyard grapes are hand-picked on land that has been the setting since 1844, for one of the oldest known vineyard sites in the Lower Hunter Valley.
The small Semillon vineyard at Sweetwater Estate is located on the gentle slopes beneath the main building on clay loam soils giving the Sweetwater semillon a unique florally, citrus profile. It is much more approachable while young than its sandy river, flat grown siblings.
Grown in ancient soils, nourished by local clear waters and blessed by Australia’s abundant and constant sunshine, this Sweetwater Estate Semillon is produced in typical Hunter Valley style without oak influence.
Harvested in the cool of early morning, before sunrise, the juice was quickly pressed and fermented using wild yeast populations .

Deeply coloured, it holds its cards close to its chest at first but, with air, it becomes magnificent. Plush, inky blood plums are wrapped in a matrix of complex tannins that build from the mid-palate. Adding intrigue is a faint sanguine note, along with fragrant potpourri and dried dark cherry. It is a dark and serious wine of character and depth destined to evolve beautifully with time. Decant vigorously if drinking young."
